Most modern cookers have a flame-failure safety device, a thermocouple, that cuts the gas if the flame isn't detected. When it's dirty, bent or worn out, the flame dies as soon as you release the knob. Cleaning or replacing it fixes the problem.
This can come from blocked burner ports, a dirty injector or low gas pressure. A yellow, sooty flame isn't just slow, it can produce carbon monoxide. It needs checking.
Usually water or grease on the igniter switch, often after cleaning the hob. If it doesn't stop once dry, the switch or module needs replacing.
We test the element, the energy regulator behind the knob and the wiring. On ceramic hobs we also check for cracks, which are a safety issue.
Knobs and gas valve spindles wear out. Stiff gas knobs shouldn't be forced.

Yes. Lift off the caps and heads, soak them in warm soapy water, use a soft brush and a pin for the ports, and dry them completely before refitting.
